Apple pancake muffins

Trying out a recent pin for some pancake muffins. I opted out of the maple syrup frosting this time. The result is a beautiful pancake muffin and absolutely delicious covered with bacon and maple syrup.

This recipe had a scant amount of sugar and very easy to make.

Kid approved, we will be adding this to our breakfast menu....maybe I will give that maple frosting a shot next time.
