White Chocolate Chip, Cherry Muffins
3 cups all purpose flour
1 cup sugar
1 1/3 tbsp baking powder
1 teaspoon salt
2 eggs
1 cup milk (or Whey)
1/2 canola oil
5 ounces of Maraschino Cherries
1 1/4 cups White Chocolate Chips
Glaze
2 cups powder sugar
2 tbsp of cherry juice
Use 2 tbsp of cherry juice into a small bowl with 2 cups powdered sugar, mix and set aside for glaze. Chop cherries (about half a jar you can use more if you want them to be more cherry flavored)
Combine flour, sugar, baking powder, and salt in a large bowl.
Whisk eggs, milk, and oil in separate bowl. Add dry ingredients and stir until moistened. Mix in chopped cherries, fold in White chocolate chips.
Grease muffin pan or use muffin cups, fill 3/4 full. Bake at 375 degrees for 12-14 minutes. Cool for 10 minutes. Drizzle with glaze.
*Note: I have a child that doesn't care for maraschino cherries and therefore I did not top them all with glaze. I think the next time I make these I am going to try using real cherries and cherry juice, I think the tart would go well with the white chocolate.
*Note: I use whey from my yogurt instead of milk when I bake.
